10 Quick Recipe Ideas for Spinach
We all know that green vegetables are good for us, but it’s not always easy to make them actually taste good, especially if you have a family and are trying to please multiple palettes. Couple that with having a long day and just needing to get something healthy on the table and your veggie creativity is bound to run out of steam.

The 10 quick recipes below will make a spinach-believer out of you
We’re going with the inspiration approach here so I’ll leave out the nitty gritty details, but hopefully this will rev up your creative juices and you can take it from there.
Here we go!
1. Spinach frittata. Lightly sauté some spinach in butter, then add scrambled eggs with s&p and other herbs or seasoning, then cheese on top, and pop in the broiler to finish it off. Check out this frittata recipe if you want more details.
2. Basic sautéed spinach with garlic. Place some butter and sliced garlic in a pan, add a whole lot of spinach (it shrinks) and some sea salt, mix for just a few minutes until the spinach has mostly shrunk but it is still vibrant green. Serve as a side dish.
3. Spinach and noodles. Use the homemade veggie stock or bone broth you made in advance then warm up with some spinach, mushrooms, and rice noodles.
4. Strawberry spinach salad. Combine spinach with fresh sliced strawberries, pecans or sliced almonds, and a vinaigrette of olive oil, vinegar, s&p, and a little orange or lemon juice (and zest).
5. Green smoothie. Combine a handful of spinach, 1 date, frozen blueberries, coconut water, and chia seeds. Blend and enjoy.
6. Spinach and brown rice. Cook some brown rice (soak in advance if possible), then mix in some fresh spinach while the rice is still steaming hot, add some coconut aminos and kimchi for flavor.
7. Spinach hummus wrap. Get a wrap of your choice, spread some hummus around the center, then add spinach, a drizzle of olive oil, some sundried tomato, alfalfa sprouts, and any other veggies of your choice, close the wrap like a burrito. Perfect for a work lunch!
8. Spinach artichoke pasta. Make some pasta like you normally would. Make some simple spinach and garlic like you would for #2 above, remove from the pan, then add some more butter and throw in some artichokes into the same pan. When your pasta is ready, combine it with the artichokes, spinach garlic, a little olive oil if it needs lubrication, and oh what the hell sprinkle a little parmesan on top.
9. Spinach walnut goat cheese salad. Combine those three things and drizzle with vinaigrette made with olive oil, apple cider vinegar, fresh thyme, fine chopped-garlic, lemon juice and zest, s&p.
10. Happy green juice. Combine cucumber, celery, spinach, green apple, and a 1/4 lemon, run through the juicer, and if you like a little texture toss in a few chia seeds and let them expand for a few minutes before drinking.
